This seal guarantees that our coffee’s flavor comes from the land, climate, altitude, and traditions of its birthplace — characteristics no other place in the world can replicate. When you choose Cocuy Coffee, every sip helps support its rural communities and contributes to rural development in areas such as employment, agro-tourism, and environmental conservation.
100% Colombian Coffee
100% Colombian Coffee
We carry this logo because it represents a promise — a promise that our coffee is truly Colombian, grown and roasted on a single farm and supported by the standards of the Colombian Coffee Growers Federation(FoNC).
The FoNC is the institution that represents and protects more than 500,000 coffee-farming families. Through an official license, we honor their legacy and the generations of growers who have shaped Colombia’s identity through their craft.
This seal is more than a certification; it is a tribute to the people who rise before sunrise in the Andes, who cultivate each cherry with care, and who preserve the heritage of Colombian coffee for the world. When you choose Cocuy Coffee, you support this tradition while enjoying coffee that is genuinely, verifiably 100% Colombian.

From Process to Flavor & Acidity
Flavor Profile +
Flavor Profile
Expect a dark-chocolate-forward cup with smooth, low acidity and a rich, chocolatey texture. It finishes long and lingering with a bold cocoa character.
Washed process +
Washed process
Double fermentation The coffee under goes two separate fermentation stages:
12 hours in cherry – the coffee ferments while the bean is still inside the whole fruit. This stage develops sweetness and complexity.
12 hours in mucilage – after depulping, the sticky mucilage layer ferments around the bean, refining acidity and clarity.
Our Cocuy Coffee fruit is fermented and then washed with water before drying. This usually produces a clean, bright, and clear cup profile, highlighting acidity and origin characteristics.
“Smooth” indicates the result:
A balanced, gentle cup with controlled acidity, refined sweetness, and no harsh or overly funky flavors.
Citrus +
Citrus
Low citric acidity, smooth acidity. It’s not sharp or citrusy; it supports the chocolate profile instead of standing out.
Ideal for all brewing methods
