Double fermentation The coffee under goes two separate fermentation stages:
12 hours in cherry – the coffee ferments while the bean is still inside the whole fruit. This stage develops sweetness and complexity.
12 hours in mucilage – after depulping, the sticky mucilage layer ferments around the bean, refining acidity and clarity.
Our Cocuy Coffee fruit is fermented and then washed with water before drying. This usually produces a clean, bright, and clear cup profile, highlighting acidity and origin characteristics.
